Ingredients

1 loaf Captain John Derst’s bread

1 cup mayonnaise

¼ cup grated parmesan

¼ cup grated asiago

1 teaspoon onion powder

1 teaspoon white pepper

2-3 tablespoons spicy brown mustard

10-12 small pearl onions, peeled and thinly sliced


Directions

1. Using a small cookie cutter, cut 2-3 rounds out of each slice of bread. Place on a lined cookie sheet and toast under a broiler until golden brown on one side.

2. In a large mixing bowl, add the mayonnaise, parmesan, asiago, onion powder and white pepper. Mix to evenly incorporate all ingredients.

3. Remove the toasted bread from the oven and flip over so that the toasted side is on the bottom. Spread a small bit of mustard over the untoasted side of each bread round. Add 1 slice of onion over the mustard and then about a teaspoon of the cheese mixture over the top. 

4. Place the sheet tray under the broiler for 60-90 seconds or until they get slightly golden. Serve immediately.
