Ingredients
Loaf of day-old Captain John Derst bread
3-4 peaches
3 large eggs
½ cup white sugar
½ cup heavy cream
2 cups whole milk
1 ½ tsp. vanilla extract
4 tsp. white sugar (for topping)
Directions
1. Preheat oven to 350 degrees and grease baking pan. Set on a baking sheet and set aside.
2. Peel and cut peaches in to slices and set aside.
3. In a bowl, whisk together the eggs, ½ cup white sugar, cream, milk and vanilla.
4. Place bread slices in your baking dish. Place peach slices between slices of bread and pour some of the egg mixture – until it reaches the top edge of the dish. Let stand at room temperature for 15 minutes and top with the remaining egg mixture until it reaches the edge of the dish.
5. Brush the top of the bread with an egg wash and sprinkle on white sugar along the top crust edge.
6. Bake at 350 degrees for 35 minutes or until golden and set.
7. Remove from the oven and let stand 10 minutes before eating. If not eating right away, allow to cool for 10 minutes, then cover and refrigerate.
